Slow Braised Stewing Steak

Sweet & Sour Beetroot & Onions

Smoked Bacon Mash



1kg thick flank stewing beef
30ml oil
1 bottle good red wine
8 peeled shallots, diced
4 cloves garlic, crushed
8oz Diced peeled carrots
2oz dried porcini mushrooms
Salt & pepper
Large sprig of thyme
1 ½ pints beef stock



Briskly fry the flank steak getting good caramelization with the oil. Take out the flank, add all other ingredients to the pan except the wine and stock. Gently fry the vegetables and herbs for 5-8 minutes. Add the wine and reduce by half. Now add the flank together with the beef stock, simmer very gently until flank is very tender.
I would suggest leaving to sit overnight in the fridge to let the flavours develop further.

Beetroot & Onion
4 beetroots peeled & diced
1 red onion
1 sprig thyme
150ml red wine vinegar
85g brown sugar



Reduce vinegar and sugar by half in pan. Add diced beetroots, onion and thyme. Cook until beetroot is tender.
